These Chewy Peanut Butter Cookies Will Change Your Life (Keto, Flourless, No Sugar, High Protein)

I am not being dramatic when I say that these peanut butter cookies will change your life! They’re so incredibly chewy and delicious with every bite.


I created this recipe because so many people have trouble digesting flour. I meditated on the idea of a completely flourless, high protein cookie for a couple weeks and one day, God revealed to me the ingredient that would make the flourless cookie possible: collagen peptides! With His idea fresh on my mind, I ran to the kitchen and created what our family and friends have called “the best cookie they have ever had”. So, as you make and enjoy these delicious cookies, know that they are a gift from our Father in Heaven. ☺️


Disclaimer: We don’t recommend our patients to eat peanut butter regularly because it is inflammatory, it is an anti-nutrient and it is high in histamine. However, as with everything in life, balance is key! Unless we tell you to avoid nuts/peanuts during your nutrition appointment, these cookies are a great treat to enjoy on occasion.


Without further ado, here is the recipe God has revealed, just for you 🤍


Ingredients:

  • 1 cup creamy organic, natural peanut butter (Make sure the ingredients in your peanut butter are ONLY dry roasted peanuts and salt. And because natural peanut butter has oils at the top, make sure you stir the peanut butter thoroughly and mix in all of these oils before adding into your mixing bowl. )

  • 1/2 cup collagen peptides (I use this brand)

  • 1/2 tsp baking soda

  • 1/2 cup bamboo sweetener, or alternative sugar replacement (we sell this exclusively in our office; we are one of the only practitioners in the world that sell this. If you’re interested in purchasing, please contact us at 386-247-0608)

  • 1 tsp vanilla extract

  • 2 pasture raised eggs


Directions:

  1. Preheat oven to 350

  2. Stir peanut butter together well to incorporate the oils into the peanut butter

  3. Mix all ingredients listed above together in a large mixing bowl

  4. Roll dough into 1.5” balls (about the size of a golf ball) and place on a baking sheet, leaving about 2” between each cookie.

  5. Fill a glass with filtered water and dip a fork in the water, then press down onto each cookie, making the iconic peanut butter cookie print. You will want to dip your fork in water between each cookie, otherwise your fork will stick to the cookie and make a mess.

  6. Place cookies in the preheated oven and bake for 8 minutes

  7. When done, the cookies will be perfectly toasted on top. They won’t be completely firm right when you remove them from the oven, but they will firm up the longer they sit.

  8. Store in an air tight container in the fridge and enjoy for up to a week after making.
