I made the viral zucchini cheese “bread” and all I can say is WOW…

I have seen many recipes going viral on social media, but this one takes the cake! I was so surprised by how tasty this actually was. So, I put together an official recipe for you, based off of several different videos that I watched online.


I absolutely love how versatile this recipe is. You can use the “bread” to make a traditional sandwich, or you can roll it up like a tortilla and eat it as a burrito or a wrap. Get creative, have so much fun, and enjoy. I hope you enjoy this as much as we have!


Yield: 2 slices of bread OR one burrito


Ingredients:

  • Shredded cheese (About a half a block of shredded cheese, see image below)

  • 1/2 of a medium zucchini, thinly sliced with a mandolin or vegetable peeler (see image below)

  • Ingredients of your choice (I filled my sandwiches with grass fed beef pastrami, grass fed corned beef, sprouts, avocado, tomato, mustard and baba ghanoush. This recipe is also phenomenal for burritos, so think Mexican-style fillings like rice, shredded chicken, beans, etc. Another great option would be making it into a meatball sub)


Directions:

I have included step-by-step ingredients below with photos!


STEP 1: Preheat oven to 400F

STEP 2: Line baking sheet with parchment paper. I LOVE this non-toxic parchment paper with pre-cut sheets!!

STEP 3: Shred cheese onto parchment paper (about half the block, I didn’t measure exactly). Arrange in a rectangle shape so that it looks like this:


STEP 4: Thinly slice zucchini with a mandolin or a vegetable peeler so they look like this:


STEP 5: Place paper towel on the sliced zucchini and absorb up as much water as you can. Don’t skip this step or your “bread” will be soggy. I like to use this non-toxic paper towel because it’s 100% bamboo, without the harmful chemicals.

STEP 6: Place zucchini slices on top of shredded cheese, as shown below. Don’t overlap the zucchini slices too much because it won’t cook as well. It should now look like this:


STEP 7: Add a handful of shredded cheese on top of the zucchini slices. If you want to do more than a handful, go for it!

STEP 8: Bake at 400F for 20-25 minutes, or until browned.

STEP 9: When done cooking, remove from oven and let cool on the counter for about 5 minutes. This just makes the “bread” easier to work with. You should now have something like this:

STEP 10: You have two options here: 1- Fill one side of the rectangle with your favorite fillings, then roll it up into a burrito (this is my favorite way), or 2- Cut the rectangle in half, creating your top and bottom piece. Then, fill with your desired ingredients and assemble your sandwich (Dr. Chris’s favorite way).
