Sweet + Creamy Vanilla Macadamia Frosting (Dairy-Free, Fungus Protocol Approved)

My creamy vanilla frosting is an absolute delight. The star of the show in this recipe is…drumroll, please…macadamia nuts!


Macadamia nuts naturally have a very rich, buttery flavor and texture. These qualities are what allow macadamia nuts to make the PERFECT frosting.


And, since this frosting is homemade, you can be sure that there are no harmful additives or sugars in it. Win win!


YIELD: This recipe makes enough frosting for about 24 cupcakes.


INGREDIENTS:

  • 2 cups dry roasted macadamia nuts with sea salt (I get mine in bulk from costco, or you can get this brand from Amazon)

  • 1/2 cup + 1 TBSP of full fat coconut milk (I love this brand)

  • 3/4 tbsp vanilla powder (I use this brand) or 1 1/2 tbsp of alcohol-free vanilla extract

  • 2 tbsp bamboo xylose (sold exclusively in house)


DIRECTIONS:

  1. Blend all ingredients on high for 1-2 minutes in a high speed blender. Make sure to scrape down the sides half way through to ensure all is well blended.

  2. Once it is completely blended and resembles a frosting, you’re done!

  3. Use immediately or store in an airtight container and enjoy within 3-4 days.
