This is my favorite pesto that I’ve ever made, hands down. This works amazing as a pasta sauce, in quinoa, on rice and even on turkey burgers (it works like a pesto aoili on burgers)!
INGREDIENTS
2 1/2 cups fresh basil
1 cup coconut milk full fat (I love this brand)
1 1/2 cups dry roasted, sea salted macadamia nuts (I get mine from Costco in bulk)
3/4 tsp sea salt
3 organic garlic cloves
1 tbsp lemon juice
1/2 tsp bamboo xylose (sold exclusively in the office)
DIRECTIONS
Blend all ingredients together in a high-speed blender
Enjoy immediately or keep in the refrigerator and use within 3 days
