I can’t believe how easy it is to make pancakes that taste like traditional pancakes, without the flour. These have been a staple in our home! If you’re ever wondering what Dr. Chris eats for breakfast, you can almost guarantee he has had his banana pancakes. ☺️
Ingredients:
2 medium bananas or 3 small bananas (the riper the better)
4 eggs
Pinch of salt (I use this brand)
1 tsp cinnamon (I used this brand, I LOVE their spices!)
1 tbsp bamboo sweetener (sold exclusively in the office. If you’re interested, please contact our office)
Butter (for sautéing)
Directions:
Add all ingredients into a blender and blend (you can mix by hand, but it’s harder)
While blending, heat up a pan with butter over medium high on the stovetop.
Once the butter has melted, make sure the butter is covered over the entirety of the pan, and, using a 1/4 cup, make the pancakes! I skip the measuring cup and pour the batter right from my blending jar and into the pan (trying not to dirty too many dishes).
When you notice the pancake is holding together, flip and cook on the opposite side for a few seconds.
Continue until batter is finished, adding more butter each time before adding more pancake mix to ensure it doesn’t stick/burn.
Add desired toppings! We don’t eat maple syrup in our home. Instead, I will blend a handful of strawberries, blueberries or blackberries together with bamboo sweetener before I blend my pancake mix and top out pancakes with this! The strawberry is our favorite, making the iconic strawberry banana pancakes! ☺️
