Coconut Flour Chocolate Chip Cookies (Fungus Protocol Approved + GF)

Do you have a sweet tooth during the fungus protocol? These chocolate chip cookies will do the trick, and they can be made with just a few ingredients and in just a few simple steps.


These cookies are fungus protocol approved, gluten-free and oil-free.


Let's jump right in. ☺️


INGREDIENTS:


  • 1/2 cup organic coconut flour (I use this brand)

  • 1/2 cup bamboo sweetener (sold exclusively in the office)

  • 1/2 cup softened, room temperature, grassfed ghee (I love this brand) OR you can sub for grass fed butter.

  • 2 pasture raised eggs (I love the brand Vital Farms or the blue heirloom eggs from Costco)

  • 1 tsp vanilla powder (I love this brand) or 2 tsp alcohol-free vanilla extract

  • 1/5 tsp sea salt

  • 1/2 cup chocolate chips with ZERO sugars (I use this brand)


DIRECTIONS

  1. Preheat oven to 350 and line a baking sheet with parchment paper

  2. Mix all dry ingredients together

  3. Add wet ingredients and mix well

  4. Use your hands or a cookie scoop to make small balls of dough and place them on the baking sheet (you should have enough for about 15 cookies)

  5. With your fingers, press each ball down into a cookie shape

  6. Bake in preheated oven for 10-12 minutes (or until golden brown)

  7. Let cool on counter for 30 minutes, then place into a container and put in the refrigerator for minimum of 1 hour (this helps the cookies form and keeps them from breaking. You can also enjoy these cookies warm, they just may fall apart a bit)

  8. Store in the refrigerator and enjoy ☺️
